Naturally Leavened modernist pizza with old world values

MEET HENRY & MAKEILA Henry and Makeila met while working in a tapas bar in 2018, Henry as the executive chef and Makeila as a front of the house server. Henry has experienced over 16 years in the culinary world as an executive chef, head baker, and pizza aficionado. Although Makeila did not lean into the food industry until college, she's been surrounded by the sights and smells of beautiful ethnic foods her whole life thanks to her dad and grandpa who also influenced her to be an adamant home cook. Together, Henry and Makeila collided their combined Mexican and Pacific Islander heritage into Pan Con Queso. Some Mexican inspired pizzas include the "Verde" and "Chorizo con Papas" while the "Mr. MacArthur" was inspired by Makeila's maternal grandpa who would always say, "Spam is the Hawaiian prime rib." Pan Con Queso offers naturally leavened modernist pizza, while paying tribute to the old world, the ones who influenced us, and paved the way for it all. Provecho!
